Late Dinner: Wings.

Always not a good idea to eat dinner late when you are super hungry. Bad decisions are made.

Brunch: Lunch meeting. Take out Chinese food. Beef and broccoli.

Dinner: Food court Thai curry. Terrible. Ugh.

Lunch: Extra lean ground beef, perilla leaves, tomato, onions.

Drizzle hot sauce (optional). Serve.

Takes 10 minutes to make.

Breakfast: Eggs and crushed walnuts.

Pre WOD Snack and Dinner: Slow roasted pork shoulder.

Last night bought 6lbs of pork shoulder. Smeared miso paste over it with sprinkling of chopped garlic. About eight drops of liquid smoke. Wrapped it really tight with four sheets of aluminum foil.

This morning shoved it into the oven before I went to work. Set the timer on the oven for seven hours at 350F. Came back home to pork that was literally falling apart. Broke it up with a fork and tongs. Photo was taken just after I took it out if the oven and opened up the foil.

Drizzle hot sauce + BBQ sauce (paleo version if you have it made) = dang good pulled pork. I just ate as is as a snack and with lettuce for dinner. But would taste excellent on fresh bell pepper slices.

Lunch: Lettuce wraps with store bought roast chicken. Garden fresh romaine lettuce and perilla leaves. 

You could use salsa. But I prefer Korean bean paste (ssamjang). While bean paste is technically not paleo, it is fermented so the lectin load is significantly reduced.

Breakfast: Egg scramble with extra lean ground beef, tomatoes and perilla leaves. Grapefruit. 

Perilla leaves are more of an Asian lettuce. Part of the mint family. Have a very peppery/bitter taste of arguala with the texture and very slight minty freshness undertone of the traditional mint. Koreans call it deulkkae. 

DAY 41 - Breakfast: More cabbage, leek and beef soup….oh SNAP! Regular paleo food! Nevermind.  

Asparagus, broccolini, mushrooms and spinach eggs muffins with ground turkey. 

DAY 40 - Dinner: And again…cabbage, leek and beef soup.

DAY 40 - Lunch: More cabbage, leek and beef soup.

DAY 40 - Breakfast: Cabbage and beef soup.

Starting to finally feel better from this cold. Hopefully should be able to knock it in a few more days. 

DAY 39 - Dinner: More chicken soup. With ground beef fry up with asparagus on the bottom.

DAY 39 - Lunch: More soup. And leftovers.

DAY 39 - Breakfast: Getting sorta sick and tired of all this stupid soup. But still have this cold lingering. And until I get rid of it, I need to keep getting water into my body. Some left over veggies and ground beef I made last week.
